Types of bread
Polish
bakeries produce almost 200 types of bread among which the most traditional is
rye bread, wholemeal bread, Old Polish bread and Kashubian bread. Buying
wholemeal bread which contains grains, nuts and prunes is all the rage at the
moment.
Traditional
Polish bread is based on sourdough which comes from the mixture of flour and
water. Excellent bakers use recipes which date many
centuries.

Rye
Bread (sliced)
This is bread made by the sourdough method, where leaving and flavour
result from the addition of a small amount of old dough in which
lactic-acid- producing bacteria have developed. These micro-organism
ferment some of the carbohydrates in fresh dough batch, producing
characteristic sour taste and smell. The leaving is the product of a
mixture of pytel rye (double ground ) flour and wheat flour. Salt and
yeast is also added. |
